Praise for LCI from Top Chef Winner, Chef Hosea Rosenberg 

Pleased with LCI Students, Staff and Facility - Would Hire Graduates

 

On Monday, November, 9, 2009, Top Chef, Season 5, Winner Chef Hosea Rosenberg held two demonstrations for students and staff at the Louisiana Culinary Institute.  See his impressions of LCI below:

Hey Charlie,

I'm so sorry this took so long.  I've been just slammed lately.  

My experience at LCI was definitely a positive one.  It is probably the cleanest campus I've been on!  

I thought the staff was very helpful and accommodating during my visit.  I really appreciated the way the staff handled the few issues came up with my ingredient list.  There were a few minor items that were unavailable and they made sure I had adequate substitutions.  Everyone was professional and serious without being rude or off-putting.  I think they all seem to really enjoy their jobs there.

The students acted very professionally and courteous.  The student chefs who worked with me put their heads down and did all of the work I had asked of them.  They seemed to be really focused and present.  Nobody seemed confused or on the "wrong page" with the jobs they were given.  When it came time for the demo, everyone pitched in and the whole thing went very smoothly.  

I have a lot of faith in the caliber of students coming from LCI.  From the graduates I worked with last year at NOWFE to the first year freshmen I was lecturing, I think there is a lot of strength in the group.  I would certainly hire on the graduates into my kitchens and I would be honored to make another visit to the school.
