2008 Louisiana Alligator Soirée LCI places 3rd in well-fought bid to defend title Louisiana Culinary Institute (LCI) would like to congratulate our students at this year's Alligator Soiree in New Orleans. This year's team was Dustie Latiolais, Bryan Joubert, Trip Illings, Pat Holstein, and alternate Brad Bridges.
Team LCI placed third in the competition. They displayed two very creative dishes the with mystery ingredients, which were Corn Chips, Beer, Peanuts, and Artichokes.
The appetizer was an Alligator Roulade Lollipop which was stuffed with alligator, artichokes, shallots, and thyme. The main course was a Homemade Ravioli speckled with red and yellow peppers. The ravioli was stuffed with alligator, artichokes, and parmesan cheese and served with a brown butter sauce and asparagus garnished with Tabasco caviar. Both dishes were creative and delicious.
Many judges were surprised that Louisiana Culinary Institute did not repeat as champions. The Alligator Soiree Competition was won by the ACF New Orleans chapter. Look for our LCI students to compete in the American Culinary Federation of Greater Baton Rouge competition on September 22, 2008.
