Chef Kyle Hudson has always had a passion for cooking and the culinary arts even at a very young age- he gravitated towards the energy and experiences of the kitchen.


Professionally trained in French technique, he loves to celebrate the local bounty of the Gulf Coast, and all that Louisiana has to offer. Having the opportunity to train with a diverse group of James Beard Award winning chefs it has inspired his cooking styles to have an influence from across the globe.


What Kyle loves most about cooking is the freedom and fluidity he finds in the kitchen. The symphony of the sounds of a busy Friday, the dance of the cooks and servers on expo for service, and the performance of the front of house team members taking care of our guests. Chef Hudson’s favorite Louisiana fish to cook are Wahoo and Red Snapper. He cherishes time with his children, two boys, Jack and Hugh, and his daughter, Mary Margaret. When he’s not working you will find him fishing or golfing. Kyle has been with the Louisiana Culinary Institute since January 2025, and we look forward to seeing him grow as a Chef Instructor and mentor to the students.
