From ProStart to Pastries: Student Spotlight on David “Malachi” Hamilton
For David “Malachi” Hamilton, a passion for food started long before he stepped into a professional kitchen.
Born and raised in Central, Louisiana, Malachi grew up watching his grandmother care for people through food. As a caterer, she showed him that cooking was about more than preparing meals. It was about bringing people together, serving others, and making sure everyone felt cared for.
Today, that same mindset continues to shape his culinary journey at Louisiana Culinary Institute.
Building on a Strong Foundation Through ProStart
Before enrolling at LCI, Malachi participated in the ProStart program while in high school.
Designed for students interested in culinary arts, ProStart gives aspiring culinary professionals an early introduction to the industry, offering opportunities for high school students to earn college credit, scholarships, and transfer credits that can help accelerate their culinary education after graduation.
After high school, Malachi chose to continue developing his skills at Louisiana Culinary Institute, where he is currently pursuing a degree in Baking and Pastry Arts. His culinary ambitions don't stop there. Once he completes the baking and pastry program, he plans to enroll in LCI's Culinary Arts program to further expand his knowledge of savory cooking.
A Passion for Nutrition, Food Safety, and Service
While many culinary students dream of opening restaurants or creating signature dishes, Malachi is motivated by something deeper.
He is passionate about helping people access nutritious, safe food and ensuring that the meals he prepares contribute to their well-being.
"I want to make sure people are fed nurturing, safe foods and that they don't get sick from what they're eating," he says.
Looking ahead, he hopes to one day use his culinary skills to give back to others through pro bono cooking opportunities that help feed those in need.
No matter where his career takes him, serving others remains at the center of his goals.
Learning Through Repetition and Real-World Experience
One of Malachi's favorite parts of attending LCI is the hands-on learning environment.
He particularly enjoys the kitchen labs, where students prepare and serve meals to fellow students and guests. The experience has helped him develop both confidence and efficiency in the kitchen.
He has also developed an interest in molecular gastronomy, enjoying the creative and scientific aspects of culinary arts that allow chefs to think differently about food preparation and presentation.
Outside the classroom, Malachi works with Bacon & Fig Events, gaining valuable real-world experience that complements what he learns at LCI.
Working in a professional kitchen environment has reinforced classroom concepts while helping him improve his efficiency, adaptability, and ability to think on his feet during busy service periods.
Thriving in a Supportive Culinary Learning Environment
Malachi values the supportive environment he has found at Louisiana Culinary Institute.
"The teachers are great. They have so much knowledge and want to share it. They want the students to succeed."
He appreciates the mentorship and guidance they provide, noting that instructors consistently encourage students to improve every day.
"They're focused on you performing better than you did the day before, and it shows."
He also enjoys being surrounded by fellow students who share his passion for continuous improvement.
Being around like-minded individuals who are driven to learn, grow, and challenge themselves has created an environment where students encourage one another to keep getting better.
For Malachi, those relationships have become an important part of the educational experience.
Advice for Future Culinary Students
As someone who has already benefited from both ProStart and LCI, Malachi offers simple but important advice to new culinary students:
"Remember to have fun, and absolutely nothing that you do while in school will ruin your career. You're here to learn. Mess it up."
